Its called "irony" as the differences between the two groups could not be in more stark contrast. Irony is often a component of "humor."

Also, given on-line censorship (not on FR) such terms are often necessary to have one's post stay visible.

It got it’s start after 9-11 when Bush declared islam to be a “Religion of Peace”. Someone said they must be Amish if they are peaceful, and the moniker stuck, eventually morphing it’s way into Blacks and Hispanics.

You are missing the entire point. The media has come come up with every euphemism to NOT describe what we all can see can see with our own eyes.

The Amish represent the ultimate absurdity because they are the exact opposite. No disrespect intended, quite the opposite.
