Peel, slice, bread and fry (in olive oil) eggplant slices and
make eggplant parm - over pasta, or as a parmesan sandwich
on Italian bread or whatever.

Or use the slices in a vegetable lasagna - Mmmm....

Made similar such on several occasions and it is tasty, but it’s no substitute for actual meat.

Yep, eggplant too. I’ve done veggie enchiladas more than once - filled with some nice sauteed squash, onion, and peppers as well as rice and beans.
