My brother married into a Thai family in Central California. They grew up in North West Thailand, close to the Myanmar border, and immigrated as adults.

His wife’s sister worked as hostess in an upper-scale Thai restaurant in San Francisco. She would complain that the restaurant food was not hot enough, so at home she grew her own hot peppers, and took them to work for diners that wanted true hot Thai peppers.

My wife takes her hoke-grown peppers with her when we go out to eat. They are hot but not the hottest but flavor counts also.

I like spicy but they are too hot for me.
