Nah, I just bake in glass baking pans, 9X11 I guess, I plop two chunks of dough in each one. Rise for half an hour, and bake for 45 minutes at 375.
I do in an iron Dutch oven. Keep the lid on for a good toothy crust, then take it off the last 10 mins of baking to brown. The lid traps the steam in the Dutch oven that creates that desired chewy texture.
