I've also started trying to figure out the craft of bread making. I noticed store bought bread was awful and three months later it was still visually perfect. That scared me.

Now I make my dough and bake my breads. It's not as easy as you'd think. I prefer the French Baguette or Italian loaf. Haven't gotten the texture just right yet.

On french bread, look up Ethan Chlebowski. It takes about 4 hours total and you have to do the stretch and fold technique several times.

I’ve recently retired from my main gig so I’ve returned to the culinary arts. Baguettes (actually sandwich sized—authentic are 24” long) came out great.
