I think it depends on the type and how long it’s aged; but my experience with it is very limited. If I want to strong, smelly cheese, I’ll get Blue or Gorgonzola. I love those.

Wife and I are big fans of Jarlsburg (sp) and Parmesan from Reggio d’Emelia, IT with some 10+ year old balsamic vinegar.

I have a weakness for the imported Romano at Costco.
Great over pasta... and sublime sliced, with some crusty bread, salami and a glass of wine. Yum!
