Ok, common vegetables are good. I get that. What is an uncommon vegetable?
Penn (of Penn & Teller) went on an all potato diet. I think he ate 3 large ones a day & lost a pound a day. He ate them plain, without even salt & pepper. I heard he commented that after three weeks you can discern the difference in flavor of a really good potato!
