Real question. I love good chicken wings and used to enjoy Hooters occasionally but the last 5 to 10 years I’ve noticed a change in the wings or breading or maybe the sauce. Its just not as good. Has anyone else noticed that?
I could be in a minority but a well fried wing (not even considering sauce) should be two things. 1) Med-Large in size and 2) Cooked at a lower temperature for at least 20 minutes. Breaded or not, wings need to be crispy. Not rubbery.
That's how the Thirsty Turtle in Juno Beach does it, and when you add their sauce, it's pretty much wing heaven.
