I like your list except for Brussels sprouts, my mother used feed me them and I didn’t care for them as a kid.
However, I should give them another try, because often taste changes somewhat with age.....so now they may be delicious.
BTW I couldn’t imagine not eating meat but I’m a ‘free to choose’ individual that doesn’t judge other peoples diets.
I didn’t like Brussels sprouts as a kid either but I love them now. They are really filling. I roast them in the oven or steam them, then eat them with either potatoes or rice.
In my opinion the key to good vegetables is how you season them and not cooking them too long and turning them mushy.
