My mom’s curry is a West Indian version since that’s where the great grand parents ended up courtesy of the British. Food as a whole in India is interesting. There are 2 seasons of a show “Raja, Rasoi Aur Anya Kahaniyaan” on Prime. Very interesting look at the food of India, not just curry.
I love good curry. Historically, hot spicy foods were developed in hot countries in the days before refrigeration to help mask the taste of tainted meat. Not yet old enough to make you sick, but without masking the off flavors the meat it would not have been palatable.

And you cannot overestimate how many lives were saved by things being peaceful enough that farmers could farm (for a counter example, see Somalia).

Well, maybe that's a little harsh, but I've had very few curry dishes that had me going back for seconds.

Exactly.. I was told by an owner of an Indian restaurant that curry was first developed to mask the taste of rancid meat.
It always struck me as odd that hot spicy food came from hot humid or arid countries, at least it did until I heard that story.
