Just got some last week but haven’t tried them yet . Come in a glass jar , made in Latvia . Fresh “ iwashi “ sushi I love ! Many great Italian pasta recipes that use sardines . Pasta con sarde for example . Easy to make , too .
And don’t overlook sprats.

OMG the Nuri brand of Sardines in tomato sauce was like tasting my Noni’s sauce and the hairs on my arms stood up. They are expensive, but I have found a source that is about a 1/3rd less, I just have to go and buy them in bulk and stock up. Great on a salad BTW, pour it all over the Salad and add Balsamic Vinegar.
I like the King Oscar because they’re small. I like the tiny sardines, not the big ones

Only problem with sardines, is you have to actually eat them.
increase enzymes and stomach acid. the oil from the fish agitated your liver/gallbladder as you’re not producing enough enzymes or acid any more. Most of us don’t as we get older.

I just looked up Belgian fries, and they do it right: double fried in tallow.
At one time McDonalds served excellent French fries. They used fresh potatoes and fried them in tallow.
I’m a BJ’s member. I can’t vouch for what they do with their contributions, but I can say I find their stores politically very neutral.
Admittedly, it’s so difficult for any company with more than a handful of employees to remain politically neutral, much less demonstrably conservative.
I do them in olive oil. Incredible, especially with Sauce Andalouse.

The double frying seems to be the key. I learned this from a guy who worked in a sports bar. They fry them briefly in the morning, kind of blanching them, then keep them in the fridge. They pull them out one order at a time and fry them a second time.
Most people don’t know that canned fish is cooked twice in some cases: Once at the processing plant and again as canning/sterilization.
IMHO, same applies: Vitamins, yes. O3, negligible.
My label for canned tuna is ‘fish-flavored chicken’.
