For the past several years my son has smoked around 20lbs of mixed cheeses to give for Christmas presents.

Has to be a cold night with just a few hunks of charcoal and hickory. If the smoker temp hits 100 the cheese starts sweating.

“The large Weber kettle grills are underrated for smoking.”

I had a cylinder smoker for a couple years, but the old Weber classic kettle has that beat. It is the most versatile cooker I’ve found.

Don’t get me wrong, show me a plate of food and I will eat it. I just don’t want to spend a lot of time fixing or standing around a hot griddle or grill. I have AC in the kitchen, and I like that just fine.

I don’t consider what I do as BBQing, just grilling. I used to have a Weber Kettle, and it was great. Gas grilling cannot compare to charcoal- it just doesn’t taste the same.
But it is convenient. I don’t have a lot of cleanup afterwards.

Wait till you retire: You’ll go back to charcoal; because time will be meaningless.

The new pellet smokers are pretty much set it, and forget it. They take all the work out of it. Most you have to do is make sure the hopper is full and wrap meat.

LOL, I am retired, and I totally get what you mean.😀
My daughter and son-in-law just bought me a really nice Char-Broil gas grill for my birthday, and the thing is stainless steel, has 5 burners, and a side burner for charring the outside of steaks and chops. It’s beautiful, and I will get a lot of use out of it.
We rent, and we can’t have any more than one grill outside, otherwise I would happily have a Weber as well.
Nothing like that taste you get from the charcoal or the hardwood!
