I have no problem with MSG and use it regularly. There are plenty of other things with nasty sounding names that are harmless. For instance, Xanthan gum. You’ve probably seen it on ingredient list next to a bunch of chemicals. It’s a great thickener that doesn’t discolor food. I used it yesterday to thicken a cherry sauce.
Adverse reaction to MSG is very real. I am a poster boy for that concept. While I understand not everyone has an adverse reaction, many do. I’m just one of many. I avoid it like the plague. That includes all the derivatives mentioned in the article which are found in most all processed foods.

I have to avoid MSG, and I automatically know when I’ve eaten something with MSG. I get a distinctive headache behind my eyes. At a Chinese restaurant years ago, the cook at the grill put a bunch of MSG in my food without telling me. I had a MASSIVE headache that night, the worst I’d ever had, and I couldn’t sleep. So, yes, there are people like me who are very sensitive to MSG.
I wonder if the adverse effects of MSG are due to genetics like cilantro. Most people love cilantro but some (like me) find it awful. My understanding is that is due to genetics.
All the carefully engineered and reported scientific studies in the known universe pale if MSG gives you a raging headache when you consume it. Many people report this effect. Sometimes I get a headache and sometimes I don’t, but the times I do far outweigh the benefits of eating lower grade Chinese food.
If it ain’t MSG amusing the MASSIVE unquenchable thirst I experience after eating Raman Noodle I’d like to know what it is? I started eating Raman decades ago with no problem. Big fan of MSG in my cooking days. But five or so years ago boom! With Raman it’s torture. A few other things give me a way milder form of the thirst, certain pizza places food, certain hotdog brands, Chinese food in general. I put as much salt on food as I ever did with no problems at all.

I keep a container of Accent in the cabinet and use it frequently. MSG has never caused me even the slightest amount of trouble whether eating it at home or eating it at restaurants.
Around 25 years ago, I had a number of issues including headaches, increased tinnitus, stinky sweat, bleeding gums, and halitosis (yes, I brush regularly and well) — all of which decreased significantly when I chucked the Ajinomoto and ruthlessly eliminated any processed food that contains MSG.
Youve never really had a bad day at work until youve had to take care of people that have both severe mental health problems and violent digestive system reactions to MSG.
If it were harmless then it would not have over dozens of names to hide that it is msg in the food.
I always feel tired after eating any food that has msg.
