Back in the day when I was raising a big family I bought a whole horn of Longhorn at a time, sliced it and wrapped for the freezer.
It was cheaper that way.
I use cheddar cheese that is already shredded and it works just fine.
Correction: I use Colby shredded cheese in my Cheese Boats.
But have used cheddar and it was just fine.

Cute terms. I’ve eaten it for 50 years without ever thinking of the name. I’m pretty sure we had it in CA. I know we had the El Pa to sauce. I might have to go to a specialty market here.
