Eating fat doesn’t make you fat. It is the carbohydrates in milk, sugars, starches etc. If you are eating starches, you MUST balance them with fiber.

This is actually true, but very hard for most people to conceptualize.
When you learn that fat is created by metabolizing blood sugar in the presence of insulin, and that fat (lipids) in the blood is actually not stored in the cells as fat, it blows your mind.
I can eat chocolate bars, just not the highly sugared ones. 90% Cacao, down to 65% is a nice treat once in a while. M&M’s..... or regular candy? No..... No more ice cream or mac a cheese. I can though eat omelets, just restrict the hash browns and fries.
