To: texas booster

Cheese, yogurt, saurkraut, BEER, sourdough bread, wine, vinegar, cultured butter, kimchi, fish sauce, kefir,..are all products of fermentation...
My guess is that long time ago, some guys milk (or cabbage) went bad...the dude was starving, ate it, survived, and realized he didn’t have to throw it away.
P.s.....spell checker for article probably auto subbed “fragmentation” for fermentation in some sentences of article.

Some 60 years ago when I was but a crumb-cruncher my grandfather who I suspect was in his mid 80’s or older lived with us. He would leave his bottled milk on the window sill for days and drink the result. I never tried it but it looked really nasty. To him it was a delicacy. Many years later I saw a reference to eastern Europeans having the same fondness to soured and curdled milk.
