Its not strange if you think about it.

Lots of refined sugar/white flour carbs, are about as bad as drinking alcohol to your liver. This can cause liver damage and cirrhosis of the liver.

Lots of refined sugar dumped into your body quickly is a serious event your bosy has to deal with fast to keep your blood sugar levels within a decent range or you go into a diabetic coma. So its very stressful on the pancreas.

Starch, as in white flour, is not too bad, since it depolymerizes into glucose which is readily used by the body or converted to fat.

Sucrose (cane sugar) is bad, because it is a disaccharide that consists of one molecule of glucose and one molecule of fructose, i.e. it is 50% fructose. The fructose has to be metabolized in the liver, sort of like ethanol.
