Popcorn reduces the echo in the room.
Spray textured (popcorn) has minimal taped wall bore joints. The spray is almost the same as wall board mud. In truth you have no paint. Hides a lot of defects but won’t refinish suitably.
Tape and sanded like a wall will show every wavy ceiling joist however so knock down finish is the way to go.
You are correct. It requires less finishing, spray it and go.
