Mama Ninfa Laurenzo is the one who first made skirt steak fajitas, and therefore is the ‘mother’ of said item.
Oddly enough, the original Ninfa’s on Navigation (East Downtown), sure enough isn’t owned by her family. They sold it, but opened a restaurant directly across the street from it, and have several around the city.
I had read or heard she sold out or let her fam run things and that did not end well. She was a big time R and received several awards.
