I remember being grossed out watching a documentary on how the Inuit in the Arctic take birds and put them in a rock cair to rot/ferment. They consider it a delicacy. Then sometime later I learned how Italians make aged prosciutto ham and it is just as gross.

We live in the soup of bacteria, are part of the soup, and will return to the soup. I still eat prosciutto and if I’m ever presented the chance I will try that fermented bird.

I am part Sardinian, where they make that cheese that gets eaten when it’s full of maggots.
