Strange. All the guy had to do was just walk out of the store. Fighting with the police is not too good an idea.
One of the deputies told the guy and the gal that they would be going to his car where he would take "their information".
If the guy had warrants out for his arrest, then he knew he was going to end up being handcuffed, which would require him to be searched; the gun was going to be discovered.
He was basically fighting against time (the time it would take for more LE to arrive); the clock ran out on him, but not by much. (He had his gun out. This could have been a tragedy for any or all of those deputies.)

Gonna go way, way out on a limb here, and speculate that the dude had warrants that were good enough to result in him being taken to the house. Then he had a problem, cause, taking another big speculative leap, he might well have been a felon in possesion of the firearm, and who knows what dope he was holding for his tweaker girlfriend. Chances are this guy has been making bad life choices for quite a few years.
He had the chance, initially, to just go with the program and scoot. There was some small chance that the deputies wouldn't push it and let him leave just to save paperwork. But our man here is not a rocket scientist, and his brain wasn't working too fast. By the time he realized that he could just walk away, his big mouth had already made sure that he was going t spend the night in the hoosgow.
The guy I can't figure is the dork who runs up and decides to involve himself in the scuffle. The deputies were doing fine, and he just added to the confusion.
