Also in Seattle now. My wife's relatives started Empress Chili - they were the ones who started that style of “chili” in Cincinnati. They used to ship us cans of it!

As a west-coaster, who knows nothing about real Cincy chili, I just make it by heating a can of Nalley’s chili, putting it over spaghetti (usually angel hair), and topping it with shredded cheese. My kids like it, I like it, and that’s all that matters.
