Problem is I live in Wisconsin so even the ones ran by those from Mexico who speak no English often tone down their food to the point where Taco Bell is more spicy.
If you want good Mexican food, you can learn to cook it yourself or ask where the cooks are from. A friend of mine opened a Mexican place in Old Town Alexandria VA back in the 90’s. He brought cooks up from San Antonio. Good stuff.
There is also a good book to use as a reference.
The title is “The Tex-Mex Cookbook”. It is a history in recipes and photos. It is my go to book. Author is Robb Walsh.
