Most “Mexican Food” is really “Tex-Mex”, which is as American as apple pie.
Tex Mex is a Texas thing. I have had meals in Mexico and they were not spicy. Monterrey and Mexico City. They use a lot more colors than spices. It’s more like French food.
Outside of Texas, “mexican” food is a gamble.
Real Mexican food gives you more gas.
