Brisket
Well it’s more than brisket.
Texas barbecue is brisket and it’s not corned beef.
But yes, I did learn a while ago that pastrami is beef, not pork.
Brisket isn't fit for anything but grinding into hamburger meat.
I make pastrami from venison loin. That stuff is slap yer momma good.
