The second ingredient in real chorizo from Mexico is oats or cereal grains. The first ingredient is pork lymph nodes & salivary glands, then oats. I’m looking at a tube of it from my freezer right now has big on the side hecho en Mexico its authentic as you can get bought from the little Mexican grocery down the road where you have to speak Spanish to check out or order from the meat counter as not a single person in the building speaks English.
Chipotle, like Taco Bell, is not for Mexicans; it is for gringos who want to eat something that claims to emulate Mexican cuisine. (One sees the same emulation in Olive Garden for Italian cuisine, and Panda Express for Chinese cuisine.)
