I believe these hogs aren’t suitable for human consumption. If they are, it’s the equivalent of consuming carp.
The males would have boar taint. (taste bad) The sows would be OK but a lot of them are filled with parasites. I wouldn’t eat them.
Actually their quite tasty, especially the ones between 50 to 75 lbs.

You would be incorrect in that assumption. They tend to be leaner and make good ham cuts and sausage. Many get a diet of grains during the growing season and especially now with corn everywhere to bait deer. My family is hunting them 5 nights a week in Texas with great success.
