I thought they liked to launch rockets/spacecraft as close to the Equator as possible because the spin of the Earth itself can help give it a push?

In general, launches from Florida are for equitorial orbits and they launch to the east to take advantage of earth’s rotation. Launches from west coast, are for polar orbits. Vandenberg and Pt Mugu also do ICBM test flights that launch west into the Western Test Range.

For a polar orbit, it's best to launch far north.
