So do evaporating black holes really destroy information, meaning unitarity is not a true principle of nature?

No more so than a melting Ice Sculpture destroys information, or burning a book to ashes destroys information.

The Black Hole radiates particles as it shrinks. Those particles came from whatever mass the Black Hole previously absorbed.

Those particles are no longer in the same form as when they were absorbed, but I believe that the conservation of energy laws are not violated.

No one ever averred that they were. Rather, the apparent conundrum was about the informational content of that energy, which should not decrease, but which seemingly would.
