I have one question that needs to be answered.
Did the coronavirus trials include subjects between the ages of 2 and 18?
If not, how do doctors know it’s safe for that age group?

They made sure to choose the absolutely healthiest people they could find. After that, they started giving it to people with all sorts of problems.

There was an article about a 13 year old girl who was paralyzed at the Pfizer trial.

The original US trials for the Pfizer/BioNTech vaccine included age 16 and up. Moderna’s original trial was for age 18 and up.

Since then, multiple trials have been conducted in multiple countries, including the USA, to assess different COVID vaccines in younger age groups.

Some are still underway, but some have reported results. That schedule is what largely drives the regulatory announcements.
