MMMMMMM... if the kraut is homemade then all the "good bugs" are there. I make mine with a full bulb of garlic and 4 habanero peppers in a quart of shredded cabbage...WONDERFUL stuff.
I think the habaneros sear any polyps that may be "poking" around. LOL

I make the same thing/ingredients, but I also add carrots and radishes. Mine may be closer to kimchi.
