Your lead was good; for the Amazon Fire the path in Settings was 'Keyboard and Language' or 'Keyboard' anyway (my short term memory is ragged today) and then 'Current Keyboard Settings'. It appears that all of the autocorrect features are listed with an on/off toggle. Oddly, my autocorrect setting is off - which I must have done when I first got the Fire tablet - and then forgot.
However, there are a number of other features that are convenient such as suggested words which can save a lot of keyboard tapping; obviously it is a trap since a suggested word can be added after I finish typing a sentence, proofread it and move on. Later, when I go back to proofread a section there is the gibberish that I have to try to remember what I originally wrote.
There is auto capitalization and spell checking that I can usually tolerate. There is both 'Show Word Suggestions' and 'Next Word Suggestions' which is a set of unnecessary options and likely a trap. Some of these features are useful but probably open up the AI intrusion that is so maddening.
I will have to experiment and see what I like best. As I say, some of these features are quite useful and can save a lot of keyboard tapping.
