Last time I stayed in Texas, the restaurants I went to were offering gravy on top of just about anything and everything. Waitresses had a big boat of the stuff on hand. I’m not sure if that was just a local thing, or a Texas thing.
I grew up in San Antonio, so Tex Mex was all I ate for the first 18 years of my life, well that and Briskets.
Never had a taste for fried stuff, and sweet tea is nasty, just liquefy some sugar and drink it, it would be the same thing.
