It's Friday night and I have a hankering for a pigfoot and a bottle of beer. But I'll settle for some oysters on the half shell in place of the pigfoot.

I have all of Bessie Smith's recordings and whenever I turn somebody on to her, they are amazed. Truly one of the greats.

I’m of Slovenian descent. I was a common thing in my house to have pigs feet as a meal (or treat).
Mom would boil them for hours and then add pectin to the “tea” of pig foot water. When it came out of the refrigerator hours later it was quite literally a pigs foot in pig flavored jelly.
The adults would sprinkle vinegar on top for more flavor as it was a bit bland, but I just dug right in.
My family now would turn green at such a thing. The tradition from the old country was to eat the parts of meat that the rich folks and royalty didn’t take.mm Same concept as Haggis, but an entirely different dish.

I like the way pigs feet are served in Korean dramas, hearty down to earth food. Been thinking about trying to make some sort of pigs feet dish.

I remember that!
BTW, I actually got to see Janis in her last performances. Johnny Winter showed up and jammed with her for the whole second half of the show. It was awesome.

Actually, I realize it wasn’t her LAST performance which was in Harvard Stadium. The show I saw was a year earlier, at the Music Hall in 1969.
