I can see there being a market for former alcoholics who cannot be anywhere near bars, but still want this type of experience.
A friend of mine, who has been sober for 20 years occasionally joins me at the local bar. They have about 80 beers on tap, and many more in can/bottles including 2 NA ones.
However, I don't think you could actually operate a bar with nothing but NA beer. It would be like a coffee house that only had decaf.

We were sitting at a bar having lunch this past weekend. A guy walks up, sits, orders a bowl of ice cream. He turns to us and says “I don’t drink anymore so I eat ice cream”.
