No fast food chain can ever top what the average person can make at home.

My favorite chicken recipe is to take 2-4 chicken leg quarters, season them with spices of your choice, and put them in a cast iron skillet, skin side down, for 17 minutes on medium heat.

Then flip the chicken over and place the cast iron skillet in a 450 degree oven for 15 minutes.

Just 32 minutes to perfection with minimal prep.

The chicken will fall right off the bone every time.

frying chicken is a hassle but most Sundays its easy to roast a chicken, an they make good soup and sangwich..

When you talk about leg quarters. I season them with McCormick or traders Joe's chicken seasoning then using indirect heat on my charcoal grill using apple wood for smoke. When they are done I lay on the homemade Gates and Son's barbecue sauce.

I know what I'm doing today!

I’ll try yours, but here’s mine:

Debone leg quarters (or large thighs). Salt and pepper. Put enough olive oil in a pan to film the bottom. Put the chicken skin side down in the pan and heat until the skin starts to sizzle. Turn down to low, making sue you hear a light sizzle and leave for about an hour. Flip the chicken and turn in the heat long enough to cook the top of the chicken. Drain on paper towels.
