My favorite chicken recipe is to take 2-4 chicken leg quarters, season them with spices of your choice, and put them in a cast iron skillet, skin side down, for 17 minutes on medium heat.
Then flip the chicken over and place the cast iron skillet in a 450 degree oven for 15 minutes.
Just 32 minutes to perfection with minimal prep.
The chicken will fall right off the bone every time.

Debone leg quarters (or large thighs). Salt and pepper. Put enough olive oil in a pan to film the bottom. Put the chicken skin side down in the pan and heat until the skin starts to sizzle. Turn down to low, making sue you hear a light sizzle and leave for about an hour. Flip the chicken and turn in the heat long enough to cook the top of the chicken. Drain on paper towels.
