Some food is simply too economical not to exist.

Today, people gobble up chicken wings. Tomorrow, it will be beaks & talons, with some kind of Asian sauce.

The fish stick sells fish that would otherwise have no market.

I expect that the Lima Bean stick was simply an attempt to move Lima Beans, which don’t really have much of a fan base.

Many moons ago, one of my sons decided he was hungry, went downstairs, put some frozen fish sticks in the microwave, put then on high for 10 minutes.

I came down because the smell of those burned up fish sticks was awful. Stinked up the house. They looked like scrawny black pieces of charcoal.

We are fish sticks most Fridays. I also remember having Chinese food out of a large can, which was served over white rice. Of course there were TV dinners on Sat. Mom said kitchen was closed Saturdays.

Healthy Fish Sticks, by the Westmoreland Athletic Club's Blog.

makes 12 fish sticks

3 tilapia filets
2 egg whites, beaten
1 1/2 cups panko bread crumbs
1/2 teaspoon sea salt
1/2 teaspoon pepper
1/4 cup parmesan cheese

Preheat oven to 450.

Lay a wire rack on a baking sheet and spray it with non-stick spray.

Cut the tilapia once down the middle, then in half, creating four ā€œsticks.ā€ Season with salt and pepper. In a bowl, beat the 2 egg whites. In a separate bowl, add the panko, salt, pepper and parmesan cheese. Dip each fish stick in egg whites, than in the panko mixture, pressing to adhere. Lay on the wire rack and spritz with olive oil.

Bake for 10 minutes, then flip and bake for 10 more minutes. Serve hot!

I love the Filet O Fish, but the chief problem is McDonald’s almost always puts a ton of tartar sauce on it which can wreck your shirt as you drive and eat. The McBites were effectively Filet O Fish morsels without the mess. I read they were a Lent item that didn’t catch on, but that doesn’t negate their awesomeness.

You remember? Especially when you didn’t know any better. Back then there were no Chinese restaurants where we lived.

When we had four young kids, fish sticks were our go-to meal when we were too exhausted to really cook but had to put dinner on the table. That, and a bag of frozen mixed vegetables. And of course a big dollop of ketchup on the plate to dip the sticks in.
