Took my living a while south of the Mason-Dixon line to be exposed to and grow fond of grits. Trying to turn yellow grits into white by rinsing in lye might not give the fine character that naturally grown corn lends to the palate, eh?
Actually, after being reminded by the exchange, I hustled downstairs and cooked up a batch of grits which I greatly enjoyed. Corn bread is another matter to which I think I'll address my attention today!
