Actually, I quickly make potato salad for myself by making mashed with a cup of potato flakes, spooning in sweet pickle relish, diced sweet onion, some dry or paste mustard, diced boiled eggs, mayonnaise, and salt to taste. I like it still warm, just made. Probably quite fattening, but
very tasty.
No messing around with peeling, boiling, and dicing whole potatoes. I'm a bachelor. When alone, I just eat it out of the pan and then wash up. All done, everything.
One pan, one paring knife, one soup spoon.
