There's a whole lot more conjecture here, it seems, than data. For starters, there are a whole lot more ways of 'processing' than just one. Much of the processing today is injecting chemicals rather than old fashioned smoking. I happen to like the old fashioned type far better than the chemical ones. What are the chemicals? Which is worse? How did they separate just the 'processing' from the other factors? How did they separate bacon from the other factors? Etc.

With a range of electric smokers out there the process of making your own bacon is fairly easy. BTW, the smoked brisket we had for supper last night was scrumptious!
