My wife makes crust less cheese cakes...They’re not baked but chilled and they are fantastic. She too uses coconut flour and also walnuts for various dessert dishes.
Bacon, lots of bacon. Oh, and you can eat all the pork rinds you want.
For cheesecake try chopped pecans
Boy, that’s tough. Almond flour is used in so many recipes!
Someone mentioned coconut flour, but it’s different to bake with than almond flour. I can’t remember the source (didn’t make a note of it), but here is how to substitute coconut flour for almond flour:
“A common question is whether you can substitute almond flour for coconut flour and the other way around. Yes, often you can but not in equal amounts. 1 cup of almond flour can be substituted for 1/3 cup of coconut flour. 1/3 cup of coconut flour can be substituted for 2/3 cup almond flour + 1.5 tablespoons of ground psyllium husk powder. The amounts may need to be adjusted depending on what brands you’re using.”

I am almost totally carnivore. I use pork “panko” (ground up pork rinds) for some recipes. In ‘fathead’ dough for pizza, I substitute pork panko for the almond flour. I also make “bread” for Thanksgiving stuffing using pork panko. I buy the bags of rinds & just throw them in the food processor - significantly less expensive than buying it already ground up.
We use Carbquik instead of Bisquick for shortcake, waffles and biscuits. It’s popular with the Keto folks being much lower in carbs.
Eat all the meat, eggs, and cheese you want.
Fry a few pounds of bacon and crunch it up. Great flour substitute.
Lately, I’ve been making some Maria Emmerich’s recipes. I got the “carnivore crust” idea (using panko instead of almond flour) from her. Her recipes are good & I like the ideas I get from her cooking. Her hard boiled egg pudding is outstanding, btw.

You don’t need a crust. Keto or not, I’ve not used a crust in decades.
If you do need/want a crust, use ground pecans or walnuts.
Other nuts might have too strong a taste for keto breads but would be just fine in cookies or crackers. For white bread, use the egg white recipes out there.
If you don’t have a mold for the egg white bread, you can make one. A slice of store bought regular sandwich bread is about 4” square. Cut four strips from whatever (I used a plastic milk jug) about half an inch wide and 4 1/2” long. On each of the ends, make slices halfway into the width. Connect the sliced ends together into a square like you did with Lincoln Logs. Plop the bread “dough” into your new mold to form a slice of keto bread. Of course, don’t bake the mold! Wash and reuse for the next batch.
Use ground pecans, walnuts or jarred parm cheese to make a crust for fish and chicken.
Although a bit higher in carbs than almond flour, lupin flour is a possibility. It’s also high in protein. Some Keto people have a problem with more protein, but I think that is exaggerated. You could try some other nut or seed to see if that works for you.
Some people use cauliflower or cooked chicken for a low carb pizza crust, but honestly I haven’t found one that I find acceptable.
If you are looking for good low carb bread products, Braum’s makes the best tasting low carb bread. It’s called Carb Watch, and it’s wonderful. Braum’s is only in a few states, though, and they don’t ship goods.
Thin Slim is pretty good and sometimes in stores. I’ve heard of another low carb bread company called Franz, but that is also regional.
Aldi’s now sells Keto breads and low-carb tortillas. they are OK, but a little bland and dry. Mama Lupe and Mission make low carb tortillas. Those are really good.

Back in the 1950s there were few obese people.
I’ve gone on what I call The Fifties Diet, which involves eating as we did in the fifties, as best as I remember.
Of course, it’s hard for me to find some items: catfish, squirrels, rabbits, quail, ducks, etc.
A meal like pork chops, mashed potatoes and gravy, side of peas, and corn bread fills me right up without, seemingly, causing weight gain. Ditto pinto beans seasoned with a ham hock, onions, tomatoes, salt and black pepper, served with corn bread and spinach. Et cetera, et cetera, et cetera.
Check out cassava flour. It isn’t cheap, but it works quite well.
