Dave's Insanity and similar sauces use pepper extract. The basic methodology behind making a very simple chili extract is to submerge dried chili peppers in a very pure food grade alcohol which draws out the oil of the peppers into the alcohol solution. Then after 1-2 weeks, the chili peppers are removed and then the alcohol is evaporated off leaving behind a mixture of sugars and chili oil. Once it's cleaned up you have close to pure capsaicin. Then you add that to a regular hot sauce an voila, Insanity.

Sauces like that can claim to be made from all natural ingredients but there is nothing that can match it heatwise that can be made strictly from peppers grown in your garden. That's why I never buy extract based sauces. If you want to go that route you can just buy pure capsaicin and make your own for a lot less money than buying premade sauces from someone else. Here is a link to one seller but you can find plenty of others with a search: Pure Capsaicin
