Oh, I dunno. Ramen makes a fast late-night snack when its too late to call Chinese takeout.
Quick and filling w/ a few pantry staples added. And presto....an addictive must-have dish.

PEANUT RAMEN / one serving

ING pkg Ramen noodles w/ flavor packet, tbl soy sauce, 2 tbl chunky
(or smooth) peanut butter, 2 tsp Sriracha, thin-sliced scallions, lime wedge garnish.

METHOD Boil ramen w/ flavor packet; drain off most (not all the liquid).
Toss w/ soy sauce, p/butter, Sriracha. Garnish with scallions.

Eat immediately w/ squeeze of lime.

Had this at a Republican women’s pitch-in lunch a few weeks ago. Loved it.

CABBAGE CRUNCH SALAD

Dressing
1/4 cup sugar
1/4 cup vinegar
1/2 cup oil
Heat until sugar melts
Add 2 tblsp soy sauce
Refrigerate

Crunch
1/2 cup butter (margarine can be substituted)
2 pkg Ramen noodles (chicken)
1/2 cup sesame seeds
1/2 cup sunflower seeds
1/2 cup slivered almonds

Melt butter (or margarine) in large skillet. Break up noodles; brown in butter. Add nuts and seeds. Brown until golden. Add Ramen seasoning packets.

Refrigerate.

Chop up large head of cabbage. Mix dressing, cabbage and crunch just before serving.
