Cornish Blue cheese takes about 10 weeks to mature and then has to be sold within six weeks.

Is that six week window a rule, a guideline or a policy? Does the cheese deteriorate to the point where it must have a use-by date? I've had various cheeses opened but wrapped and refrigerated for many months; if there was excess mold I'd just trim it off before using. We haven't died yet.

I always laugh, they sell parmesan wedges for like $14 a wedge.
I wait till they mark it down to $2.99 for fast sale cuz they think it is about to expire.

It aint bad, it’s been aging in a cave for 2 years! but USDA has rules.
