Haven’t made them in a long time but they rise the best when the eggs and milk are at room temperature. Traditionally topped with lemon juice and powdered sugar. Good eats.

I have a keto recipe for this that uses butter browned in the pan before adding the batter and going in the oven. My wife and I like it as a weekend treat.

I used to make these back in the 70s in a restaurant in Tiburon CA I used to cook in. It was on the Brunch menu. Time consuming but delicious. With sautéed apples.
