It all depends on the manufacturer, version of the OS and more. Remember, do it at your own risk...however, I have done it wrong before and the worst was reinstalling everything after fulll erase. Also, it voids your warranty..

This is probably the best possible site for running custom ROMs on your phone. The forum can get real confusing though, and they've gone to a new shitty format instead of the old bbcode-style forum that was easy to read. But, if you can find what you're looking for, they're great.
