Around here it was still pretty popular into the ‘70s but the only time you could reliably get it was at the sportsmans clubs. Fried turtle, with cole slaw, mashed potatoes and knee caps (little dented donut things with a glob of sweetened whipped cream on top).
Rurals still eat it here. Ive made turtle soup for my kids a half dozen times or so.
The fact is that most people have no cooking skills and the average palate has so degenerated that Mexican is now eaten voluntarily.
Many people now have grown up zapping skinless hot dogs and chicken nuggets and the only time they warm up the oven is for a frozen pizza.

Don’t hunt or fish at all like I/we used to in younger years, so, little wild game on the plate nowadays. Ate rabbit, quail, northern lake & river fish in summer & winter, venison, goose, rabbit and yep, a couple snappers & soft shells. Morrell and puffball mushrooms, too.
