We had roasted rattler in E&E classes back in the 80’s.
We just skinned them and cut it into 3-4 inch sections and roasted it on sticks.
You had to eat it like corn on the cob, rake the meat off the bones with your teeth, parallel to the “ribs.”
Yeah, it was like chicken.

Reminded me of eating a turkey neck. I certainly won’t go out of my way to have it again. A chicken thigh tastes like chicken too. I’ll stick to them.
