I’m doing a whole gator . You have to trim all the fat from between the tail muscles in order for it not to taste fishy. I’m going marinate him in a Cajun brine , rub him down with spice , and smoke with pecan . His tail will be stuffed with a cream cheese and boudin stuffing . When he’s done I’m going to glaze him with a Cajun sauce and hit him with a torch . Then we’ll have a brief photo op with an apple in his mouth !

Yes the secret on catfish and gator is to get rid of that fat.

Boudin? hell you had me there! 2 years ago thanksgiving in Tx, the girls made these dynamite boudin balls at the VFW
