We had the usual family favorites: corn pudding, green bean casserole, sweet potato casserole, oyster stuffing, etc.
However, over the last 3 years, I have gone low carb for health reasons (dodged the Type 2 diabetes bullet), so I have been trying to find side dishes that fit my life style & that are still very tasty ... the family doesn’t know they are low carb unless they ask. In the last year, my brother has joined me on the low carb journey due to serious heart health issues he needs to get turned around if he wants to see his grandkids grow up. My SIL therefore is also looking for low carb dishes to make.
One dish I’ve been making is a Brussel Sprouts casserole that I found online & made into a low carb dish. Shockingly, quite a few in the family love it - it is now requested for family get-togethers.
Two days ago, I tried a low carb green bean casserole recipe - really delicious. My brother & mother taste tested & loved it. Either my SIL will make it, or I will.
A third dish is a “Harvest Squash” casserole. I have not tried it yet, but will be making it for Thursday. I trust the recipe author to have delicious food (she did the green bean casserole recipe). With 3 sides & turkey, we low carbers + one Type 1 diabetic, will have plenty to eat. I’ve also found a sugar-free pecan pie, so I’ll be making that for dessert.
